…and no idea what to do with it.

Take a pizza dough and bake it off, or do it the easy way and buy a thin-crust Boboli or other thin crust-type bread. Heat it in the oven per the instrucitons. Meanwhile, caramalize a sweet onion in a shallow pan with some sugar and olive oil … or buy a jar of onion preserves. Spread the warmed “pizza” with the onions, then cover it with arugula. Top with diced tomatoes, goat cheese (chevre dabbed all over) and curls of parmesan cheese, a bit of salt and ground black pepper. Delicious.

I can’t do BLTs anymore without arugula either in whole or mixed with other greens. Also went through a phase recently of tuna, arugula and onions wrapped in gently toasted tortillas.

arugula and bacon quiche (with cheese, of course). saute the arugula for a bit before adding to crust.

Just got a mess of it from our CSA - last night we did a salad with the arugula and carrot sticks, topped it with some leftover asian-style salmon someone had brought over for the 4th and dressed the whole mess with a ginger soy sauce, honey and cider vinegar vinaigrette. Was shockingly tasty.

Salad! Lovelovelove arugula salad, blue cheese, vinaigrette, hot mushrooms. I can eat piles and piles of arugula that way.

No fair. Keely took my idea. Seriously, a salad with just arugula [or rocket, if you prefer its cool name] or arugula and other greens is heavenly.
I also really like a handful of it on a turkey sandwich made with crusty bread. Maybe some cheese and some bacon too. No fair. Now I’m hungry.

I love the peppery taste. Just add it to your salad, or use it anywhere you’d use watercress.

Giada just did a wonderful recipe using arugula. Although, I didn’t have any, and I didn’t have dried cherries either, or basil. HA. I still made it anyway, it was awesome. I imagine it would be awesomer with all the actual ingredients the recipe calls for. It would be a nice cool dinner salad.
