I expressed a similar opinion to a friend recently. She said to try thai eggplant. I am dubious.

What kind of eggplant were you using? I think those big fat ones are bitter but I like the pale lilac Japanese ones.

I used these pretty small white ones, having tried the big fat purple ones and the smaller purple-and-white striped sort.
